Soy, Sesame. Fermented red bean curd, soybean paste and soy sauces sometimes contain wheat. Use products specifically labelled gluten-free.. Choose mung bean or sweet-potato glass noodles with no wheat.. Verify stock is gluten-free and casein-free.

Let’s make it

  1. Prepare all dried ingredients according to packet directions and drain well.
  2. Heat oil in a large wok or pot. Cook garlic until fragrant. Add fermented bean curd or soybean paste and stir for 30 seconds.
  3. Add cabbage, carrot, shiitake, wood ear, tofu skin and optional lily buds. Pour in water or stock and tamari.
  4. Cover and simmer 18–20 minutes until vegetables are tender. Add glass noodles and cook another 5–7 minutes.
  5. Finish with sesame oil and spring onion. Add a teaspoon of coconut sugar only if the fermented seasoning tastes particularly salty.

Make the texture work

Build a simplified plate with glass noodles, soft cabbage and carrot first. Introduce mushrooms, wood ear and tofu skin in tiny separate portions because their textures can be unfamiliar.
