What you’ll need

Allergens and labels
Soy. Commercial beef balls often contain wheat. Use the simple homemade version above or a product specifically labelled gluten-free.. Use certified gluten-free tamari.. Use rice noodles labelled gluten-free.

Let’s make it

  1. Put beef, ginger, garlic, star anise, cinnamon, cloves and water in a pot. Bring to a boil, skim the surface, then simmer gently for 45 minutes.
  2. Add daikon, tamari and coconut sugar. Simmer another 20–25 minutes until beef and daikon are tender. Slice or shred the beef into child-friendly pieces.
  3. For homemade beef balls, mix minced beef, tapioca starch, salt and cold water vigorously until sticky. Shape small balls with wet hands and poach in the simmering broth for 6–8 minutes.
  4. Cook rice noodles according to the packet. Blanch bok choy in the broth for 1–2 minutes.
  5. Divide noodles, beef, optional beef balls, daikon and bok choy into bowls. Ladle over hot broth and finish with spring onion and coriander.

Serve noodles, tender beef, daikon and bok choy separately. Offer broth in a cup if mixed soup textures are difficult.
