What you’ll need

Allergens and labels
Shellfish, Egg, Coconut. Use rice vermicelli labelled gluten-free.. Use gluten-free stock.. Check belacan/shrimp paste for added wheat-containing seasonings.. Use coconut milk without dairy ingredients.

One step at a time

Let’s make it

  1. Blend shallots, garlic, lemongrass, galangal, coriander, cumin, fennel, belacan and optional paprika with a little water into a paste.
  2. Heat oil in a soup pot and cook the paste for 6–8 minutes until fragrant. Add stock, coconut milk and tamarind. Simmer gently for 15 minutes.
  3. Cook rice vermicelli according to the packet. Blanch bean sprouts briefly.
  4. Cook prawns in the broth for 2–3 minutes until opaque. Make a thin omelette in a separate pan, roll it and cut into strips.
  5. Divide noodles into bowls. Add chicken, prawns, omelette and bean sprouts. Ladle over broth and serve with lime and coriander. Keep sambal separate for adults.
