  1. Put the rice, water and optional ginger in a large saucepan. Bring to a boil, then reduce to a gentle simmer for 15 minutes, stirring occasionally.
  2. Add the chicken and carrot. Simmer for 15–20 minutes, stirring often, until the rice is very soft and the chicken reaches 75°C in its thickest part. Add more water if needed.
  3. Lift out the chicken and remove the ginger. Shred the chicken finely with two forks and return it to the porridge. Stir in the oil and heat through.
  4. Adjust with a little hot water for a looser texture. Cool to a comfortable eating temperature and offer a small portion.
