Coconut. Use unsweetened kerisik/toasted coconut with no added wheat or dairy.

Let’s make it

  1. Blend shallots, garlic, ginger, galangal, lemongrass and turmeric with a little water into a smooth paste.
  2. Heat oil in a wide pan. Cook the paste for 6–8 minutes until very fragrant.
  3. Add chicken and stir until coated. Pour in coconut milk, tamarind and coconut sugar. Bring to a gentle simmer.
  4. Simmer uncovered for 30 minutes, stirring occasionally. Add pumpkin and cook 12–15 minutes more.
  5. Stir in long beans, kerisik and kaffir lime. Cook another 5–8 minutes until the sauce clings to the chicken and the pumpkin is tender. Serve with rice.
