What you’ll need

Soy. Traditional taucheo can contain wheat. Use a certified gluten-free fermented soybean paste.. Use certified gluten-free tamari.. Verify stock is gluten-free and casein-free.

Let’s make it

  1. Pound or blend shallots and garlic into a coarse paste.
  2. Heat oil in a pot. Cook the shallot-garlic paste for 4–5 minutes until aromatic. Add fermented soybean paste and cook for 1 minute.
  3. Add chicken and stir until coated. Add potatoes, shiitake, tamari, gula Melaka and water or stock.
  4. Bring to a simmer, cover and cook gently for 30 minutes. Remove the lid and cook another 10–15 minutes until the potatoes are tender and sauce becomes glossy.
  5. Serve with rice and spring onion if welcomed.
