  1. Heat half the oil in a large pan. Add the eggs and stir until completely set, then transfer to a clean plate.
  2. Add the remaining oil, carrot, peas and water. Cover and cook for 4–5 minutes until the vegetables are soft.
  3. Add the rice and optional soy sauce. Stir-fry for 3–4 minutes until steaming hot throughout, breaking up any rice clumps.
  4. Return the egg and heat through. Lightly squash peas and cut ingredients as needed for your child's eating skills; cool the serving before eating.
