  1. Warm oil in a saucepan and cook onion and carrot for 5 minutes until soft.
  2. Add chicken, stock and marjoram. Simmer for 15 minutes, then remove chicken, shred it and check it reaches 75°C.
  3. Add rice to the stock and cook for 12–15 minutes until tender. Whisk egg with lemon, then slowly whisk in 100 ml hot broth.
  4. Stir the egg mixture back into the pan off the heat, return chicken and warm gently without boiling. Taste and add salt if needed.
