One step at a time

Let’s make it

  1. Warm oil in a large pot and cook onion and carrot for 5 minutes until soft.
  2. Add chicken and cumin. Cook for 4 minutes, then pour in stock.
  3. Stir in quinoa and potatoes. Cover and simmer for 22 minutes until quinoa has opened, potatoes are tender and chicken reaches 75°C.
  4. Add peas for the final 3 minutes. Taste and add salt if needed; stir coriander and lime into adult portions.

Preparation and cooking times are estimates. Use the doneness checks in the method.

Make the texture work

Rinse quinoa well for a mild taste. Keep peas and potato separate if a fully mixed stew feels too busy.

Season it properly

Cumin, onion and optional coriander build flavour without chilli. Add lime, pepper or ají to adult servings only.

Simple swaps

Use rice instead of quinoa or shredded turkey instead of chicken. Parsley can replace coriander.

Keep it safely

Cool within 2 hours, refrigerate for up to 48 hours and reheat once until steaming hot. Add stock to loosen.

Food education

What the ingredients bring

These are practical food-group notes, not a laboratory nutrition analysis. Portions and brands change the numbers.

  • Chicken and quinoa provide protein, iron and magnesium.
  • Quinoa contributes fibre and folate.
  • Peas, carrot and potato add vitamin C, beta-carotene and potassium.
