Coconut. Use plain coconut milk without dairy ingredients.

One step at a time

Let’s make it

  1. Heat the oven or grill to 200°C. Toss chicken with turmeric, oil and optional salt. Set aside while the sauce is prepared.
  2. Blend shallots, garlic, lemongrass, ginger, galangal, fresh turmeric and coriander with a splash of water until smooth.
  3. Cook the blended paste in a saucepan for 4–5 minutes until fragrant. Stir in coconut milk, tamarind, gula Melaka and water. Simmer 8–10 minutes until creamy and slightly thick.
  4. Grill or roast the chicken for about 20 minutes. Brush generously with percik sauce, turn, then cook for another 10–15 minutes, basting once or twice, until browned and fully cooked.
  5. Serve with rice, cucumber and long beans. Keep sambal or chilli separate for adults.

Make the texture work

Keep plain rice, cucumber and a piece of un-sauced grilled chicken aside before basting. Offer a teaspoon of percik sauce as a dip rather than coating everything.

Season it properly

Serve extra percik gravy and sambal separately so adults can increase heat without changing the child portion.
