  1. Warm the oil in a saucepan. Add the pumpkin and carrot and stir over medium heat for 3 minutes without browning.
  2. Add the water, chicken and optional ginger. Bring to a boil, then simmer for about 20 minutes until the vegetables are tender and the chicken reaches 75°C.
  3. Remove the ginger. Lift out and finely shred the chicken. Let the vegetable soup cool slightly, then blend safely following your blender instructions; never seal hot liquid in a closed blender.
  4. Return the chicken to the soup, heat through and adjust the thickness with water. Cool a small serving before offering it.
