What you’ll need

Soy, Sesame. Use certified gluten-free tamari.. Verify stock is gluten-free and casein-free.

Let’s make it

  1. Mix chicken with 1 tbsp tamari, coconut sugar, sesame oil, rice vinegar and starch. Rest while the rice starts cooking.
  2. Heat oil in a claypot or heavy lidded pot. Add garlic, half the ginger and drained rice; stir for 1 minute. Pour in stock and bring to a simmer.
  3. Cover and cook on low for 10 minutes. Arrange chicken and shiitake over the rice. Cover and cook another 15–18 minutes until chicken is cooked and rice is tender.
  4. Add bok choy for the final 4–5 minutes. Drizzle over the remaining 1 tbsp tamari.
  5. Let the pot rest 5 minutes. Finish with remaining ginger, spring onion and sesame seeds. Scrape up a little crisp rice from the bottom for adults who enjoy it.

Cook a small corner of plain rice and chicken without sauce, or serve bok choy separately. Avoid the crisp rice base if the child prefers soft textures.
