What you’ll need

Allergens and labels
Fish, Coconut if used. If using packaged tamarind paste or spice blends, check for wheat-containing thickeners.. Use pure coconut milk without dairy ingredients.

One step at a time

Let’s make it

  1. Heat oil and pop mustard seeds. Add fenugreek and curry leaves for a few seconds, then add onion, garlic and ginger. Cook until soft.
  2. Stir in coriander, cumin, fennel and turmeric. Add tomato and cook 3–4 minutes.
  3. Pour in tamarind water and coconut milk if using. Add eggplant and simmer 10 minutes.
  4. Add okra and fish. Simmer gently for 7–10 minutes, turning fish once, until just cooked. Avoid vigorous stirring so the fish stays intact.
  5. Serve with rice and cucumber. Keep spicy condiments separate.
