  1. Warm the oil or ghee in a large saucepan. Stir in turmeric and cumin for 20 seconds until fragrant.
  2. Add chicken and cook for 3 minutes, then add rice, lentils, carrot, pumpkin and stock.
  3. Bring to a simmer, cover and cook for 25–30 minutes, stirring occasionally, until the rice, lentils and vegetables are very soft and chicken reaches 75°C.
  4. Taste and add up to 1/4 teaspoon salt if needed. Mash lightly for a smoother consistency or serve with pieces more distinct.

Use diced tofu or chickpeas instead of chicken, checking soy if using tofu. Use sweet potato instead of pumpkin.
