  1. Lightly oil two small heatproof bowls. Set up a steamer with water simmering below the rack.
  2. Beat the eggs gently with the cooled water. Strain through a sieve into the bowls to remove bubbles and strands.
  3. Cover the bowls loosely with heatproof plates. Steam gently for 12–15 minutes, or longer if needed, until fully set in the centre and the egg reaches 75°C. Do not serve runny egg.
  4. Lift the bowls out carefully. They will be hot. Let the custard cool to a comfortable temperature before offering small spoonfuls.

Make the texture work

Straining and gentle steaming help create a consistent texture. Skip sauces and toppings initially if visual changes are uncomfortable.

Season it properly

For more flavour, replace half the water with a familiar low-salt vegetable stock, checking allergens. The plain version has the mildest smell.

Keep it safely

Refrigerate within 2 hours and eat within 24 hours. Reheat once until steaming hot. Texture may become firmer after reheating.
